Salon: Millésime 1999: Made of 100% Chardonnay from a single parcel at Le Mesnil-sur-Oger. No wood has been used. Rich medium-gold color, with refined streams of very small bubbles and a perfect mousse. Seductive aroma of orange, ripe kiwi, golden berry, lemon, yellow flowers, hazelnut, cold butter, chalk and seashell. A very full, round, rich Chardonnay sensation. $300

Delamotte: Blanc de Blancs vintage 2002: Delamotte has access to Salon’s grapes at certain times and uses those grapes in one of their champagnes. Less than $50 www.salondelamotte.com

Vilmart: Grand Cellier: Made of 70% Chardonnay and 30% Pinot Noir. Light golden colour with very elegant bubbles. I smell pear, dried hay, sea salt and minerals and white flowers. Graham BeckBrut N V: Versatile bubbly crafted from a selection of the classic MCC varieties, Pinot Noir and Chardonnay. Both varietals were hand-picked: Chardonnay at 18-19.5°B for fruit and elegance and Pinot Noir at 18.5-20°B for complexity and length of flavour.
